One eggplant sliced about 1/2 inch thick horizontally. Prepare dip for egg plant with: one egg,olive oil, garlic to tast, salt and herbs to taste. Mix together and dip each slice in the mixture and dreg in corn meal. Place in a flat, shallow cassorole dish (I always use the blue and white Portugese dish I bought in North London). Microwave for two to three minues.
Pour a purchased marinara sauce in a bowl. Mix parmesean cheese and any other italian cheeses including mozzarela (I purchase Sargentos mix of 5 Italian cheeses) I then add cottage cheese or riccota and pour over the top. Zap this in the microwave for 3-5 minutes and voila a delicious and easy EP. This is easier, but I have not had one baby born after eating this, but then, I've had no pregnant women to eat it either. Ok, you know, today I wondered if Cletus arrived yet and then I saw you left a comment on my blog. Maybe at this very moment Cletus is making an appearance.
I hope Cletus arrives soon. I was born WAY overdue (I won't even tell you by how much because it wouldn't be nice). My mom still complains about my late arrival...34 years later. I hope Cletus is born soon to save himself the same grief.
